Hey, people! I hope you’re enjoying May and all she has to offer you! Snow, rain, sunshine ... flowers! I have been enjoying the Florida sunshine and flowers. I think my favorite is hibiscus!

I know you all had some snow this month. One never knows what May will bring. It might be cold and windy, or maybe it will be hot and muggy. Every day offers the possibility of both.

I wish you all a marvelous Memorial Day weekend. Let’s be thankful for what we have, and who we have.

Coloring book giveaway expands

The Kiwanis Club of Middletown is expanding its giveaway of free coloring books to children in the Highspire ZIP code of 17034 as part of its May Service Project for young children.

During this time of “shelter in place,” the club originally was sending coloring books its members hand-made to children ages 2 to 7 who live in the 17057 ZIP code. Now, it will supply them to children in both ZIP codes.

If you have a child and would like Kiwanis to mail them a coloring book, email KiwanisMTNPA@gmail.com with your child’s name and mailing address.

Coloring books will be mailed for as long as the supply lasts.

College News

Lebanon Valley College inducted students into its Phi Alpha Theta honor society this spring. Phi Alpha Theta is the history national honor society.

Chiara Meyers of Hummelstown, a graduate of Lower Dauphin High School, is pursuing a bachelor of arts in creative writing and English.

Lebanon Valley College inducted students into its chapter of Delta Mu Delta as part of its 2020 virtual celebration.

Corey Knoll of Hummelstown, a graduate of Lower Dauphin High School is pursuing a bachelor of science in actuarial science and economics.

Spring Spinach Lasagna

1 jar spaghetti sauce (32 oz.)

1/2 c. sliced almonds, toasted

8 lasagna noodles, cooked and drained

4 c. fresh spinach, washed, dried and torn into pieces

1/2 c. Parmesan cheese

8 oz. shredded mozzarella cheese 

1 c cheddar cheese

Use a 9-by-13-inch pan. Layer sauce, noodles, spinach, cheddar, Parmesan, almonds and mozzarella. Repeat layers. Reserve a little sauce and a few almonds for the top.

Bake at 350 degrees for 30 minutes. Set for 10 minutes. Serve with a French baguette.
