Hey, everyone! Now that Memorial Day is behind us, we can set our sights on summer!

Who is ready to share some summer dreaming ideas? We all want to have some time away, maybe at a beach or maybe some mountain time. Perhaps you have a once-in-a-lifetime trip planned, or maybe this is the summer you will have major work done ... on your house, your car, or your person. Whatever it is, please feel free to share with your neighbors.

Enjoy the final days of May and don’t forget to share your news. Have a marvelous week!

Chicken salsa

4 skinless, boneless chicken breast halves

4 tsp. taco seasoning mix

1 cup salsa (I like mild!)

1 cup shredded cheddar cheese

2 Tbsp sour cream

Preheat oven to 375 degrees. Place chicken in a lightly greased 9-by-13-inch baking pan. Sprinkle taco seasoning on both sides of chicken, and pour salsa over them. Bake for 25 to 35 minutes, or until tender and juicy. Juices should run clear. Sprinkle cheese over chicken. Continue baking, 3 to 5 minutes, or until cheese is melted. Serve with sour cream on the side.
