Congratulations to Joe Harkins on his recent graduation from the University of Cincinnati Conservatory of Music with a master’s degree in Music Composition. He will attend The Peabody Institute of the Johns Hopkins University in the fall for his doctoral degree.

Also, congratulations to Colleen Harkins. She graduated summa cum laude from Kutztown University with a bachelor of fine arts degree in May. Colleen will attend the Maryland Institute College of Art in Baltimore this fall to pursue her master’s of fine art.

Vacation Bible School

Open Door Bible Church, 200 Nissley Drive, Lower Swatara Township, will play host to a free “The Incredible Race” Vacation Bible School from 6:45 to 8:30 p.m. June 10-14 for children 4 to 12 years old.

Easy cod fish dinner

2 6 oz. cod fish fillets

1/2 Tbsp. olive oil

1/4 cup onion, julienned

8 to 10 cherry tomatoes, sliced in half

1/4 cup asparagus tips

1 lemon wedge

Salt and pepper

2 garlic cloves, finely chopped

Rosemary twigs

Aluminum foil

Place a large piece of foil in baking pan. Be sure it is large enough to encompass all ingredients. Place the cod in the center of the foil, and drizzle olive oil over them. Add onion, tomato and asparagus.

Sprinkle garlic, salt and pepper; squeeze lemon wedge over everything and add rosemary.

Wrap the foil so ends meet at the top. Leave tiny gaps for small amounts of steam to escape. Cook in a preheated oven at 400 degrees for 18 to 22 minutes.
